Slow Cooker Beef & Butternut Squash Soup (AIP, GAPS, Gluten-Free, Dairy-Free, Paleo, Nightshade-Free)

This is the ultimate, easy winter lunch recipe that you can make in one big batch on a sunday and eat throughout the week. You just reheat and eat!

It is a one-pot wonder that has only FOUR INGREDIENTS!!

Yep…. just four!

AND it’s:

  • gluten-free

  • dairy-free

  • AIP

  • GAPS

  • paleo

  • nightshade-free

  • flavour-FULL!

Basically, it’s free of anything inflammatory, which makes it a wonderful part of any healing diet.

To boost its power, make it with some gut-healing bone broth & be sure to use grass-fed beef!

Slow Cooker Beef & Butternut Squash Soup

(AIP, GAPS, Gluten-Free, Dairy-Free, Paleo)

TIME: 8 hours (hands-off!)

SERVES: 8

INGREDIENTS

2lbs stewing beef

12 cups butternut squash (cubed)

4 cups beef broth (or use water & beef bone broth powder)

1/4 tsp sea salt (to taste)

DIRECTIONS

1) Heat skillet over medium heat & add the beef, cooking for 2-3 minutes to brown.

2) Add all ingredients to your slow cooker and cook on low for 8 hours (or on high for 4)

3) Divide into bowls & enjoy!

NOTES:

  • Store in mason jars in the fridge for 5-7 days.

  • Make the full batch and freeze whatever you won’t use in a week.

    • Freeze in flat-topped mason jars.

  • If you want to spice it up I recommend one of the below combos

    • Ginger & curry powder

    • Rosemary & thyme

    • Ginger, paprika, salt & pepper
