Instant Pot Carrot & Ginger Soup

(AIP, GAPS, PALEO, GF, DF, V)

TIME: 25 minutes

SERVINGS: 4

INGREDIENTS

3 cups chicken bone broth (ideally homemade)

1 yellow onion (chopped)

1 clove of garlic (minced)

1 tbsp fresh ginger (minced)

6 carrots (chopped)

2 tsp fresh thyme (chopped)

1 1/4 cups organic coconut milk (canned, WITHOUT guar gum - I recommend Cha’s)

DIRECTIONS

1) Turn the instant pot to saute mode. Add a splash of bone broth along with the onion and cook for 3-4 minutes. Add the garlic & ginger and saute for 1 more minute.

2) Turn the saute mode off and add the carrots, thyme and the rest of the bone broth. Put th elid on and set to pressure cooker and cook for 5 minutes on high pressure. Once finished, release the pressure manually.

3) Carefully remove the lid and puree the soup in an immersion blender or a blender. Add the coconut milk and stir to combine.

4) Enjoy & boost that immunity!
