Cauliflower Tabbouleh (GF, DF, Vegan, Paleo, Keto)

So, if you've explored any sort of low-carb, keto or paleo approach then you probably know by now the magic of cauliflower. It's a shape-shifting superhero for replacing any typically high-grain, high-carb concoction. From pizza crusts to rice, cauliflower does it all! 

A wise woman once said to me "if cauliflower can somehow become pizza & gnocchi - you can do anything!" and I think that's true! Isn't cauliflower inspirational?!

So I've made it a goal to be as versatile as cauliflower! I know in the nutrition world we are suppose to niche, but gosh darn it! I want to do it all! And why not?! Most of us deal with more than one health concern at a time!! If we're overweight, we're often also inflamed or experiencing digestive issues. If we have acne, we also often have blood sugar problems, cravings and again... digestive issues. If we have autoimmune issues, we also often have chronic fatigue and... of course... digestive issues. So why should you have to see 8 different nutritionists to deal with all of these issues?!! 

I believe that digestion is often at the root and that is absolutely a specialty of mine but that's not all I know, it's not all I've dealt with and it's not all I'm passionate about!! I've also struggled with weight management, inflammation, skin issues, fatigue, cognitive issue and autoimmunity and I have worked hard with many clients to learn how to tackle all of these things with nutritional approaches.

SO like cauliflower, I am doing it all.

So what is my niche? 

Well, I think my niche is in my approach - being realistic! (ie. The Realistic Holistic...) That can mean a lot of things. My priority is always making whatever dietary approach we choose realistic and sustainable for your life, however chaotic it may be! But being realistic also means committing to the approach that truly and honestly will bring you the greatest outcome. So sometimes, if we're being realistic, we need to take some drastic measure to get you to where you want to be.

I work using many different approaches, whatever I think is going to work best for YOU and your lifestyle to most effectively tackle your health concerns. Whatever approach I choose, I make it as easy for you as humanly possible!

I'll also have you know, I have experimented a LOT with myself. So if I am prescribing a certain diet to you, I've likely tried it myself. I've been vegetarian, vegan, paleo, keto, I've done GAPS, AIP, and the Whals Diet. So remember a couple of things, I UNDERSTAND what it takes and I've worked hard to make all of these approaches sustainable for a lifestyle like mine: fast paced, social, fun and BUSY! I've made them realistic. 

Sooooo, not quite sure how I got onto all of that from cauliflower but here is a delicious, easy and nutritious recipe that works for almost any diet ever... CHECK IT OUT!

Cauliflower Tabbouleh

Serves: 4

Time: 15 minutes

INGREDIENTS

1 head cauliflower

3 cups parsley (finely chopped)

1 cup mint leaves (finely chopped)

1 cucumber (diced)

2 tomato (diced)

1/2 cup hemp seeds

1 lemon

2 tbsp olive oil

Sea salt & black pepper to taste

DIRECTIONS

1) Rice the cauliflower by adding the florets to your food processor or blender and pulsing until the cauliflower creates a rice-like texture.

2) Add the cauliflower rice to a large salad bowl along with the minced parsley, mint, cucumber, tomatoes, and hemp seeds.

3) Add the lemon juice and olive oil and toss until everything is well combined.

4) Season with sea slat & black pepper to taste.

 

Enjoy this dish on its own or as a side! This one keeps great in the fridge for about 5 days so make a big ol' salad at the beginning of the week and you'll be taking a sexy salad with you to work all week. Make those co-workers jelly!
