Apple Spice Paleo Muffins

Got apples? ⁠ ⁠

As per the autumnal tradition, last week some I went (socially distanced!) apple-picking with some friends! ⁠ ⁠ My hubby and I came home with a HUGE bag of apples (mostly empire, they test THE BEST right now). ⁠ ⁠

For some, this may cause panic... WHAT THE HECK AM I GONNA DO WITH ALL THESE APPLES!?!⁠ ⁠ I am SO not scared. ⁠ I cannot wait to make AAALLLLL THE RECIPEEES! 😜⁠ ⁠

First up? Apple Spice (& Everything Nice!) Muffins! ⁠ ⁠

As always, these babies are:⁠ ⁠

✔️ Paleo (which also means #grainfree #glutenfree)⁠

✔️ Dairy-Free⁠

✔️ Refined Sugar-Free (it's all about that maple syrup, yo!)⁠

✔️ 100% Fall Goooodnesss⁠ ⁠

I've definitely needed to be baking something new each week with this pregnancy! When you can't just go out and buy those traditionally craved baked goods... or you could but you'd be poor 'cause gluten-free is expensive AF... it is a MUST to plan some home-baking to get you through the week. & These hit the spot! ⁠ ⁠

Pro tip: Reheat these babies and drizzle some almond butter & extra cinnamon on top for pure decadence. ⁠ ⁠

Apple Spice Paleo Muffins

(PALEO, GF, DF)

TIME: 40 minutes

SERVINGS: 12 muffins

INGREDIENTS

1 1/4 cups almond flour

1/4 cup coconut flour

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp baking soda

1/4 tsp sea salt

2 apple (cored and finely diced)

4 egg (whisked)

1/4 cup coconut oil

1/4 cup maple syrup

1/3 cup unsweetened almond milk

1/4 cup almond butter (optional)

DIRECTIONS

1) Preheat the oven to 350 degrees F and line a muffin tin with wrappers, or grease the pan thoroughly.

2) Combine the almond flour, coconut flour, cinnmon, nut meg, baking soda and sea salt in a large mixing bowl and mix well.

3) Add the apples, eggs , coconut oil, maple syrup & almond milk. Stir until all ingredients are evenly distributed.

4) Divide into muffin tins and bake fro 25-30 minutes. Optionally drizzle with almond butter while warm and enjoy!


NOTE: To make them look extra fancy, chop up some additional apple and place them on top of each muffin. Then, sprinkle with a little extra cinnamon too! YUM!
